Foodie Post: Slimming World Chicken Fried Rice

If you follow me on Instagram you will have seen by foodie posts I have been posting recently. On Monday I should have been going out with the girls from work, but it got cancelled at the last minute as one of the girls could make it. This week with me going to go out on Monday, mum planned to have something which I didn't like, Orange and Tarragon Chicken. I dont know what it is, there is just some something about Chicken and fruit which I don't like. Anyway with me not going out, and mum having the stuff in, I offered to cook my own tea. She had some extra chicken so I decided to knock up some Chicken Fried Rice as I also had some Brown rice we brought when we went shopping this week which I wanted to try.

It was SO easy to do. Basically I cooked the rice, I did half white, half brown with some peas. While that was cooking I fried some spring onions, onions and a garlic cube (frozen ones form Sainsburys are absolutely ace for putting in things like this). I then added the chicken and let it cook. When it was done I whisked up 2 eggs, chucked them in and stirred in the rice! It was absolutely gorgeous! You could obviously do it without the chicken if you are vegetarian and it would just be egg fried rice but I thought since we had the chicken anyway.

It was seriously tasty and such a cheap and easy meal - and best of all it was syn free on the slimming world plan!!!!
