Getting in the festive spirit: Christmas Gingerbread

If you had come into my kitchen last night you would have been pretty convinced you had stepped into the Bake Off tent! Honestly it was like a serious production line of gingerbready goodness!!! I wasn't just cracking out 100s of little christmas gingerbread trees for no reason, we have a fundraiser for Rainbows and Guides tonight and a bit of festive gingerbread always goes down well. Ignore the fact that the sign says stars, this was my intention until I saw the tree!!


Recipe: 
  • 2tsp Ginger 
  • 60g Brown sugar 
  • 75g Butter
  • 175g Plain Flour 
  • 3 1/2 tbsp of Golden Syrup  

Add the Butter, Sugar and Golden Syrup into a pan and cook until they are melted. In a mixing bowl add the flour and ginger. Add the warm mixture and stir together. Once in a ball, wrap in cling film and leave to cool for 30 minutes (I popped mine in the fridge). After 30 minutes roll out to about the £1 coin size. Use your chosen cutter.


Pop into the oven for between 10 - 15 minutes (depending on the size) - take out and leave to cool. They will go hard while they are cooling so don't worry if they are still a little soft when you take them out of the oven. Add some icing to jazz them up a bit and serve!
